no. 2 | fun food fridays!

let's just make that a thing, okay? 
i now declare the 5th day of the week as being: fun food fridays.
you're welcome. 

so, today is FRI{YAY}!
friday's are pretty great around here. 
it's tyler's last day of classes for the week, so we usually try to date it up...
because, hey, any reason to date, people. 

 we're dating a little bit differently this week because we (mainly i) started a new journey in my health...
& it's called the 21 day fix
have you heard of it? i hope you have! but, if you haven't, i'll give you a 2.5 second intro. 
it's an intense workout program designed to get you in tip top shape in 21 days through 30 minute daily workouts, super foods, & meal planning. 
"that's it, allison?"
"yep, that's it, friends."
& i have to tell you, it is  already changing my world around. 
this week has been an intense roller coaster of all the emotions & feelings & a lot of excitement & temptations & cravings & did i mention...i kicked this weeks butt? because i so did! 
i will write a blog post later on into my journey alllll about the 21 day fix & what i have learned through it & maybe even share my progress with y'all...but for now, i just wanted to give y'all a heads up that i've started something new...it's intense...but it's GOOD. 
really, really good. 
for my body, self image, self control, and health. 
but it's also changed the way we do things around here. 

we are foodies, tyler & i. 
we LOVE food. 
GOOD food. JUNK food. SNACK food.  
FOOD.  
ALL. THE. FOOD.
so, as you might have already guessed...with this new journey came a new obstacle: 
eating healthy. 
i mean really healthy. 
it's been a process, we're still adjusting, but we've found some wonderful recipes that we've tried out & LOVED & now want to pass along to you!

so! it's friday! it's FUN FOOD FRIDAY!
& this recipe tonight is delicious, healthy, and 21 day fix approved!
hallelujah!

ground turkey stuffed peppers
yield
  • about 3-4 peppers

21 day fix portions (per pepper):
  • 1 yellow (brown rice)
  • 1.5 red (lean gound turkey)
  •   2 green (pepper)                             
what you'll need:
  • 3-4 bell peppers (any color, we usually use green peppers)
  • 1 pound of lean ground turkey
  • a combination of mrs. dash onion & herb & garlic & herb (salt free) -- just a dash ;)
  • 1 yellow container (1/2 cup) of cooked brown rice per pepper
  • 1 red container (3/4 cup) of cooked ground turkey per pepper
  • 1 blue container (1/3 cup) of shredded cheddar cheese per pepper
  • add ground salt, pepper, & paprika to taste 
  • a sprinkle of mozzarella cheese on top
  • *optional* 1 tsp of hot sauce 
let's get to cooking:
  1. first, you'll need to cook the brown rice according to the directions on the package.  
  2. in a skillet, begin browning the ground turkey. begin adding in the combination of seasonings as you brown your meat. ( onion & herb, garlic & herb, ground salt, pepper, & paprika)
  3. cut off the tops of your bell peppers (you may throw the tops away) and set those peppers aside.
  4. preheat your oven to 325 degrees. 
  5. begin separating out the ground meat, shredded cheddar cheese, and rice into separate containers so that you can prepare to mix them together to stuff your peppers.
  6. you will begin by mixing one red container (3/4 cup) of the ground turkey, one blue container (1/3 cup) of the shredded cheddar cheese, and one yellow container (1/2 cup) of the cooked brown rice all together. mix until even & then scoop into your pepper. this should fill your pepper almost to the top. 
  7. next, sprinkle the top layer of your pepper with just a little bit of mozzarella cheese.
  8. continue steps 6 & 7 for each of your peppers. 
  9. once you have prepared your peppers, you may place them in the oven & set your timer for about 30-35 minutes! you'll know they're ready when the peppers start looking as if they're "wilting"-- any sooner that that & they'll still be a little too "firm" for my taste ;)
